POSITION TITLE: Executive Chef (contract position with intent to grow)

REPORTS TO: Food and Beverage Manager,

SUPERVISES: Catering Chef, Sous Chefs, Demi-Chefs, Line Cooks, Prep Cooks, Station Server, Dishwashers and Shipper/Receivers

OVERVIEW:

We are looking for a Red Seal certified, and enthusiastic individual to join our culinary team in the position of Executive Chef. This position supports and assists the Food and Beverage Manager in the oversight of the kitchen operation, primarily focused in the daily operation of high volume Quick Serve Restaurant, Catering & Events and Shipping/Receiving. The Executive Sous Chef assists in hands-on production, leading and managing culinary team members, ensuring quality preparation and presentation of all menu items, coordinating the purchase of all food items while maintaining food cost, developing menus, maintaining labour costs, scheduling and ensuring that all food items are handled and stored in accordance with our standards and sanitation/health regulations.

MAJOR DUTIES & RESPONSIBILITIES:

  • Train, supervise, coach and conduct performance reviews as required for team members for the efficient operation of all F&B Outlets (5 total)
  • Train, supervise and support apprentices through the ITA Program
  • Inspect method of food preparation and cooking in all areas
  • Inspect portion control in all areas
  • Maintain relationship with vendor representatives
  • Placing orders, monitoring price changes, researching new items
  • Updating order guides
  • Organize, direct and evaluate food and beverage service delivering a guest experience consistent with the values and goals of the organization
  • Ensure that all kitchen equipment is maintained and in a sanitary condition and that adequate supplies of operating equipment are always available
  • Inspect and organize all food & beverage storing areas to ensure they comply with Foodsafe standards
  • Inventory, month end counts, solving issues, invoicing, controlling costs
  • Support all team members’ learning regarding food items
  • Ensure all team members are trained in the safe work procedures associated with all of their tasks
  • Ensure compliance with Foodsafe and adhere to the Sea to Sky Gondola Food & Safety Plan
  • Ensure par stock levels are maintained by calculating inventory, ordering and retrieving supplies and stocking shelves
  • Promote our culture of sustainability through adherence to our recycling & composting procedures
  • Develop and implement cost saving and profit enhancing measures
  • Conduct daily and regular meetings with the team
  • Attend meetings as required
  • Ensure compliance with Sea to Sky Gondola Occupational Health and Safety Program and the Regulation of WorkSafeBC
  • All other duties as assigned

SKILLS AND EXPERIENCE:

  • Must be able to build and maintain credibility and relationships with customers (internal and external)
  • Strong organization and planning skills
  • Demonstrate top quality standards
  • Strong working knowledge of MS Office applications (Word, Excel, Publisher)
  • Proven ability in managing time is critical; must be able to plan and execute effectively and efficiently
  • Proven track record as a hands on leader with great communication skills
  • Knowledge of Quick Food Service operations
  • Excellent problem solving skills
  • Able to remain calm under stressful situations
  • Knowledge of food service techniques and cost controls
  • Passion for people and the outdoors

GENERAL REQUIREMENTS:

  • Red Seal certification
  • Foodsafe Level 1
  • Completion of Culinary Degree or Arts Program is preferred
  • Must be able to stand and exert well-paced mobility for up to 8 hours in length.
  • Must be able to lift up to 50 lbs. on a regular and continuing basis
